Put it to work for thin slicing of meats and fish as well as precision cuts for vegetables, such as julienne, dice and brunoise. The gently curved blade works well for rocking cuts, too. VG-MAX "super steel" blade is clad on each side with 34 microthin layers of stainless steel, creating a variegated look reminiscent of a Damascus-style blade.
